How qvevri wine is made
A qvevri is an egg-shaped clay vessel buried in the earth up to its neck. Grapes ferment in it whole: juice, skins, seeds, sometimes stems. The ground keeps the temperature stable and the egg shape circulates the must on its own.
Why amber is orange
Skins give white wine its colour and tannin: the longer the skin contact (up to six months in Kakheti), the deeper the amber hue and the firmer the structure. Hence the second name — orange wine.
Which amber to try first
Start with Rkatsiteli (the classic), then Kisi (more aromatic) and Krakhuna (softer). All three are usually on LEVEL's list — amber wine in Batumi is closer than you think.
Qvevri and UNESCO
In 2013 the qvevri method was added to UNESCO's intangible cultural heritage list. It is no museum piece: hundreds of small Georgian wineries make wine this way right now.
